There’s a home Ohio State football game the day I’m due, AND my hospital is less than two blocks from the stadium! I’ve been assured that this won’t be a problem should I actually deliver that day. The worse case scenario is that there are police here in Columbus whose JOB it is to escort women in labor to the hospital through busy traffic, even on game days. It’s their job – they have to, even if it they’re fans and would rather be watching the game. And besides that, I happen to be married to the world’s best navigator so I have complete faith that he can get us to the hospital with plenty of time to spare (not like it will truly BE a rush situation, I understand that – but a lesser husband could start out to OSU’s hospital with hours to spare and then get stuck in football traffic. Not mine. He’s a living GPS).
So here’s what I made for dinner tonight “Tortilla Soup.” It was good, too! I added a few tortilla chips to my bowl when I served it up. AND, I made a few chocolate chip cookies for dessert. Yum.
2 cloves garlic
1 med onion chopped
1tbs olive oil
1 lg can chicken broth (or two cubes bouillon dissolved in four cups water)
4 breasts of chicken cooked and cut in bit size pieces
1 bunch cilantro
2 sm or 1 large can of corn drained
2 cans recipe cut tomatoes
1/8th cup chili powder or 1 pk taco season mix
2 cups reduced fat jack or cheddar cheese
Sauté garlic and onions in large stock or soup pot until soft.
Add broth, tomatoes, corn, chili powder, and chicken. Simmer for at least an hour.
Add cilantro and continue to simmer 15 mins.
Serve garnished with cilantro and cheese
Garnish with avocado and/or sour cream
